Recipe: Stefanie’s Cappuccino Ice Cream Punch

Our MOPS moms might remember this frothy ice cream and coffee punch that Stefanie G. brought to a recent meeting. She was nice enough to share the recipe. Enjoy!

“Yes, you don’t even want to think about how many calories you are consuming in one cup, and yes, you could make it low-fat. However… just won’t be as good, so make it as a treat every once in a while.” Stefanie G.


Tip: Allow 4 hours for the mixture to chill in the refrigerator and another 1/2 hour for the ice cream to melt before serving.

Cappuccino Ice Cream Punch

Makes about 6 quarts (30-35 servings).

  • 1 1/2 quarts of water
  • 1/2 cup instant chocolate drink mix (I used Nestle Quik)
  • 1/2 cup sugar
  • 1/2 cup instant coffee granules
  • 1/3 cup ground espresso
  • 1 quart whole milk
  • 1 cup heavy whipping cream
  • 1/2 gallon French vanilla ice cream
  • 1/2 gallon Chocolate ice cream
  • Chocolate curls as a garnish (optional)


  1. In a large sauce pan, bring water to a boil. Remove from heat.
  2. Add chocolate drink mix, sugar, coffee, and espresso; stir until dissolved.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. About a 1/2 hour before serving, pour mixture into a punch bowl. Add milk and whipping cream.
  5. Add ice cream by the scoop-fulls and stir until partially melted.
  6. Garnish with chocolate curls (if desired).

We hope you had a good time connecting with other moms at our MOPS meeting on Oct 23. Thanks to Laura’s Glamorous Gold’s and Lara’s Outrageous Oranges for providing the brunch! Andreia W. introduced two MOPS fundraising efforts that are starting now:

  • Value Check coupon books – $12 each
    These books provide over $800 in food and entertainment discounts from local vendors. MOPS members are asked to sell 5 books each. Unsold books must be returned by Nov 13.
  • Flower Cards – $40 each
    These punch cards are good for a free bouquet from any Norfolk Florist location every month for a year. MOPS members are asked to sell 3 cards each. Unsold cards must be returned by Dec 18.

The top two sellers of each item will win CASH Prizes! Our annual fundraising income is critical to our group, especially for our MOPPETS child care expenses. Please see Andreia to get flower cards and coupon books to sell.

Speaker Laura R. – Mary & Martha

Laura shared the story of Mary and Martha from Luke 10:38-42 and her own story of how she personally learned to slow down to draw closer to the Lord with less stress and greater joy.

Sara M., Christin, and Colleen performed an entertaining skit about a modern-day Mary and Martha (based on this video). Martha is caught up in the busyness of life and her friend Mary helps her make time for what’s most important.

A Gift for Moms – Dish Towel with Verse

Each mom received a dish towel and a biblical verse to think of when she’s working in her own busy life:  “Whatever you do, do your work heartily, as for the Lord rather than for men.” (Colossians 3:23).

Meeting Review: “Embrace Your Story – Giftedness”

We hope you enjoyed the MOPS meeting on Oct 9. Thanks to Kristina and Yvonne’s Radiant Reds, and Kelly’s Vivacious Violets for providing the brunch! It was so abundant and delicious, we had to add a few new recipes on our Pinterest boards. We gave away some yummy door prize items, too –  a free Papa John’s pizza and vouchers for snacks from McDonald’s and Chick-Fil-A.

Mentor Moment

This meeting was all about giftedness. Mentor Mom Donna started the meeting with Proverbs 2:2-3. She shared that Solomon was asked specifically by God to request anything he wanted. He chose wisdom, because he knew that with wisdom everything else in life would come.

Operation Christmas Child

Next, Sara M. showed a video from Samaritan’s Purse about Operation Christmas Child.  Free boxes are available at our MOPS meetings. Sara invited every member to take a box to fill for a child this year. Sara displayed a sample gift box for a 10-14 year old boy, the group that receives the least gifts.

Then, she shared the great news that We Make Smiles Pediatric Dentistry & Orthodontics has donated supplies for our boxes this year! (Check out this awesome stash of toothbrushes and toothpaste!)

Guest Speaker – Pat

Our guest speaker for this meeting was our former Mentor Mom Pat, who spoke about gifted children. Pat shared common misconceptions about giftedness, various types of giftedness, and how to recognize giftedness in your child.
